Tofu Stir Fry

For the past few weeks, I have been obsessed with burgers. I ate chicken burgers, fish burgers, lamb burgers, beef ... I wanted a change for tonight's dinner and decided on a stir fry. I go food shopping on Saturday, and had a bunch of left over veggie tidbits from last weeks trip. Since I've been eating so much meat, I opted for tofu. I ate this with 1/2 cup of brown rice for a total points value of 7. For the same points as a Lean Cuisine you can eat something that will actually fill your belly (And is more tasty).
Ingredients: Servers Four 1 onion 1 1/2 cups broccoli (1 small head) 1 red pepper 1/2 cup shredded Carrots 1/2 cup mushrooms
1/4 cup chopped scallions
1/4 cup cilantro
1 pack of firm tofu (low fat)
1 tablespoon soy sauce
1 tablespoon oyster sauce
1 tablespoon Chinese wine
1 teaspoon white pepper
1 teaspoon garlic powder
1 teaspoon onion powder
3 tablespoon oil
Method:

  • Flavor oil with ginger, then toss out. Stir fry all the vegetables together. Then add a little water and let the vegetable steam with a lid on.
  • Coat tofu with corn starch and pan fry slowly till golden brown.
  • In the final step, combine the vegetables and tofu, add corn starch mixture to thicken as needed.
  • Sprinkle over chopped scallions and cilantro before serving.
