Coco Brownies with Browned Butter and Walnuts

I was looking for something special to make for a birthday. I opted out of a cake since we were only two people. I was thinking about cupcakes but after that workshop, I was cupcaked out. Hmmmmm... it was then when inspiration hit. It was then when the mail man came and delivered this month's Bon Appetite. Bon Appetite was a great Christmas gift I got last year. A gift that kept on giving! On the cover was a huge blow up picture of brownies. It said they were the best brownies you will ever eat. With a claim like that I had to give them a try. One of the best things about these brownies was how you make them. You brown the sugar in a pot first than add sugar. Almost like making a caramel. Since my beloved Kitchen Aid is out of commission, this was a great recipe for me. The result are fool proof fuggy brownies. Rich and decadent. But if you like cakey brownies these are not for you. Ingredients: Serves 16
Nonstick vegetable oil spray
1 1/14 sticks unsalted butter
1 1/14 cup sugar
3/4 cup natural unsweetened cocoa powder
1 teaspoon vanilla extract
2 large eggs, chilled
1/3 cup all purpose flour
1 cup walnut pieces

Method:

  • Position rack in the bottom third of the oven. Preheat to 325. Line a 8*8 pan with foil and spray with oil.
  • Melt butter in a medium saucepan, cook until butter stops foaming and browned bits form at the bottom of the pan, stir often, about five minutes.
  • Remove from heat and immediately add sugar, cocoa, 2 teaspoons water, vanilla, and 1/4 teaspoon salt. Stir to blend.
  • Let cool five minutes.
  • Add eggs to hot mixture one at a time, beating well after each.
  • When mixture looks thick and shiny, add flour and stir until blended.
  • Add walnuts.
  • Transfer to pan and bake about 25 minutes till center comes out clean but with crumbs attached.
  • Cool.
