Ginger Cardamom Nectarine Jam

Ever since my canning class, I've been on a mission. This week I ended up with over 30lbs pounds of tomatoes!! But that story is for another day. I wanted to share this recipe with you since it's a simple, not too sweet, no pectin, jam. The cardamom adds a fresh citrus flavor. While cardamom is expensive, I think it's worth it. Also you'll have the rest for other dishes since four jars of jam only uses 1/2 a teaspoon. Savor the freshness of summer produce all winter all :)
Ingredients: 4 pints, 8 (two tablespoon serving) per pint
3 lbs Nectarines
1 cup sugar
juice of 1 lemon
3 tablespoon freshly grated ginger
1/2 teaspoon cardamom
1/4 teaspoon salt
Method:

  • Cut an X in the bottom of the fruit and blanch for a minute, shock the fruit in water and peel and pit.
  • Chop fruit.
  • Add fruit, sugar, lemon, ginger, cardamon, salt to a pot and cook until fruit is broken down about 45 minute.
  • When fruit is broken down, mash or mix with a immersion blender to desired consistency.
