DIY Pancake Mix

As cheap and easy as it is to buy pancake mix; it's even cheaper and easier to make it. In about five minutes you can make your own mix. The best part is you know exactly what is in it. I made this one with regular white flour but am going to use half whole wheat next time. With a couple of chocolate chips sprinkled in this was a decadent breakfast made for only a couple of bucks. I plan on making several batches of the mix and giving it out with some homemade chocolate sauce (to be posted later) for a fun and inexpensive holiday gift, everyone is sure to love!

Ingredients: Makes four batches, one batch makes six small pancakes
4 cups flour
3 tablespoons baking powder
2 teaspoons baking soda
1 teaspoon salt
3 tablespoons sugar
Method:

  • Mix everything in a big bowl and store in an airtight container.
  • To make pancakes combine one cup mix, one egg, one cup milk, 1 teaspoon vanilla extract, 1 teaspoon oil.

Cost: $2.15 total, .53 per batch
Time: 10 minutes total
