Black Eyed Peas

Black eyed peas are said to bring you luck if you make them on New Year's. Worth a shot right? These beans are buttery, filling, and quick to make. I ate them with quiona and veggies for a complete balanced almost vegetarian meal. Ingredients: Serves six (1 cup servings)
1 pound smoked ham hocks
1 bay leaf
1 bag (16 oz) dried black eyed peas
6 cups chicken broth
1 onion, finely diced
hot sauce/salt/pepper to taste
Method:

  • Using pressure cooker on saute mode cook onions and bay leaf for a couple of minutes till onions are softened.
  • Add broth, black eyed peas, and ham hocks - cook on high pressure for 7 minutes.
  • Remove ham hocks and serve over rice.
If you do not have a pressure cooker cook in a dutch oven - cook for about 30 minutes on medium-low until the liquid has evaporated and the peas are soft and plumped up.Cost: $6.50 total, $1.08 per serving
