Mixto Sandwich (Cuban Sandwich)

A few years ago my parents moved down south to Fort Lauderdale, Florida. The new location brought new local favorites. One of my Cuban friends recommend a Cuban place in Miami. She recommended the Cuban sandwich, best in Miami!
Cuban sandwiches became popular in 1910 as a lunch favorite for cigar factory and sugar mill workers. A Cuban sandwich is composed of Swiss cheese, ham, roast pork and pickles. In the 1960's the dish became popular in Miami as the city gained a large influx of Cubans after Fidel Castro's rise to power.

Cuban sandwiches are simple yet delicious. Back in New York I had a hankering for that sandwich and decided to give it a go. It's a cinch to make, and most of the ingredients I had on hand. Two of the items, the Cuban bread and the roast pork, were a bit harder to come by. I ended up making roast pork one night for dinner and using the leftovers. I was able to find the bread in a speciality store in the city. If you can't find the Cuban bread, french bread also works great.

This dish is very tasty but not very good for those of you who are watching your figures. My calculations came out to 11 points per serving! With that said, every once in a while (especially on a rainy fall day), I need a mental vacation to my favorite Cuban bistro in Miami.Ingredients: Serves Four
1/2 pound deli ham
1/2 pound deli Swiss cheese
1/2 pound roast pork
1 loaf Cuban bread
4 pickles thinly sliced
mustard
butter

Method:

  • Cut bread loaf in half lenght wise.
  • Spread mustard on one side of the bread and butter on the other side
  • Place layers of ham, cheese, pork, and pickles on the bread and top with other side of bread.
  • Place sandwich in a panini press and grill for 4-8 minutes.
