I love goat cheese but don't buy it much. It's not very diet friendly and usually is quite expensive. This week goat cheese was on sale for $2.50 so I grabbed it and thought I'd figure out what to do with it later. I found this recipe in the new Weight Watchers cook book. It was bright and sunny from the lemon flavors it really reminded me of spring/summer. The almonds were nice but I might skip them next time to save some calories. Overall a fresh and light summer pasta dish.
Ingredients: Serves Four
8 oz whole wheat pasta
1 tablespoon olive oil
3 garlic cloves, minced
2 oz reduced fat soft crumbled goat cheese
1 tablespoon grated lemon zest
juice one lemon
1/4 teaspoon black pepper
1/3 cup chopped parsley
1/4 cup sliced almonds, toasted
Method:
- Cook pasta according to the box's directions reserve 1/4 cup of cooking water and drain.
- Heat oil in a large skillet and add garlic for about two minutes. Remove from heat add reserved pasta water, goat cheese, lemon zest and juice. Whisk until smooth. Add pasta, parsley, and almonds. Toss to coat.
Cost: $3.00 total, $.75 per serving
Time: 30 minutes total
