This is another dish from the cookbook Weeknights with Giada. I wanted to try it only when I noticed that I already had all of the ingredients on hand (other than the buns). This dish comes together fast. These would be a cute appetizer to serve at a party or bring to a pot luck. Giada recommends eating them with ketchup, but they taste much better with a little bit of marinara sauce and melted cheese. If you aren't having a party you can always freeze the leftovers or use in pasta later in the week.
Ingredients: Serves 8 (as a main dish, makes about 32 small meatballs)
1/2 cup crushed corn flakes
2 tablespoons of chopped parsley
2 eggs, lightly beaten
1 tablespoon olive oil
2 tablespoons ketchup
1/2 teaspoon of salt
1/2 teaspoon pepper
4 tablespoons of grated Romano cheese
1 pound low fat ground beef (I used 96% lean)
30 slider rolls (I used "party size" potato rolls)
Method:
- Preheat oven to 375 and line a baking sheet with parchment paper.
- Mix together corn flakes, parsley, eggs, oil, ketchup, salt, pepper, cheese.
- Add ground beef and mix, form about 32 meat balls using your hands.
- Cook for about 20 minutes, let cool for about ten minutes.
- Place each ball in a roll and serve.
