Celebrate summer with peaches! I was tired of the usual peach dishes and wanted to try something savory. This recipe came from Allrecipes.com and I changed it around a bit. I ate this in a whole wheat wrap but a lettuce "wrap" would work great too.

Ingredients: Serves Four
3 medium peaches peeled and cubed
2 cups cooked chicken breast cubed
1 medium cucumber, seeded and chopped
3 tablespoons of red chopped onion
1/4 cup chopped mint
2 tablespoons olive oil
3 tablespoons lemon juice (to taste)
salt/pepper
Method:
- In a large bowl combine all of the ingredients, refrigerate and let cool.
