This is one of my favorite salads to make in the summer when watermelon is at its peak. First, chill watermelon in the refrigerator. Cut it into cubes and combine it with feta. Use about half as much feta as watermelon. If you don't mind raw red onion it combines very nicely with the flavors. I like to add chopped fresh mint leaves and little bit of lemon juice and drizzled honey to taste.
