Cherry Cobbler

I hate cherries! This recipe was submitted by my mom. She loves her sweets but needed something that was more WW friendly. A take on the more traditional apple or peach cobbler, she decided to use cherries because they are in season and very healthy. If you're like me you can substitute the cherries for apples or peaches. She tinkered around the kitchen until the proportions were just right. Serve with a scoop of vanilla yogurt on the side.
Ingredients: Serves Twelve
CHERRY MIXTURE
1 lb cherry, pitted (you can also use can) But now cherries is in season and it it always better to use fresh
1 tbs. cinnamon1/4 lemon, first squeeze in the juice, then leave the lemon in the mixture
1/2 teaspoon vanilla extract
1/2 cup Splenda

TOPPING
1 cup old fashion oatmeal
1/4 up walnuts, crumbled
1/4 cup flour
1 cup of cold crumbled butter
1/4 cup brown sugar

Method:

  • Preheat oven to 350.
  • Put cherry mixture into a medium sauce pan. Cook with a little water for 20 minuets, then add cornstarch mixture to thicken.
  • Mix topping mixture in a bowl.
  • Put cherry mixture on bottom of baking dish and crumble the topping on top.
  • Bake for 25 minutes in 350 degree oven.
