Green Goddess Soup

I've been trying really hard to get more fruits and veggies into my diet. In order to do so I have to find ways to "sneak" them in. I found this recipe in my Alice's Tea Cup book. This soup tastes very creamy even though there is no cream. After eating it for a few days, I noticed a great result from eating so many healthy veggies. Best part is its all veggie so you eat as much as you want guilt free.
Ingredients: Serves Ten
2 tablespoons unsalted butter
1/2 cup chopped onion
1/2 celery stalk, chopped
3 garlic cloves, chopped
20 asparagus spears, bottom end removed
1 large handful of fresh watercress
one 5 oz bag spinach
8 cups chicken stock
salt/pepper

Method:

  • Heat the butter in a medium pan over low heat. Add Onions, celery, and garlic and cook about five minutes.
  • Combine the sauteed veggies with asparagus, watercress, spinach, and stock in a Dutch oven. Cook on medium heat for one hour.
  • Blend soup using an immersion blender.
