Pear, Prosciutto & Blue Cheese Crostini

For a while now I've been wanting to make this Pear, Prosciutto & Blue Cheese Crostini. I was intrigued by all of the flavors and prosciutto is one of my favorites. When thinking of what appetizers to make for brunch, I flipped through my new WW cookbook and was reminded of this dish. I thought it might be perfect for a brunch starter.
Salty, sweet, soft, and crunchy, this hit all of the senses. Fast and easy to make and everyone loved them! Four points is a bit high for two pieces but as a party food it's doable. I was proud to tell everyone it was a WW recipe and brought out the book to prove it. The prosciutto and cheese are pricey but only a small amount is needed. A must try for your next party :) The picture does not do it justice. Yum!Ingredients: Serves Four
1 large firm-ripe pear, quartered, cored, and cut into 16 slices
8 (1/2-inch-thick) slices whole wheat baguette, toasted
2 thin slices prosciutto, quartered
1 ounce Stilton or other blue cheese, crumbled
2 teaspoons honey

Method:

  • Spray large nonstick skillet with nonstick spray and set over medium heat. Add pear slices in single layer and cook until lightly browned, about 2 minutes on each side.
  • Place 2 pear slices on each baguette slice. Top evenly with prosciutto, sprinkle with Stilton, and drizzle with honey. Serve at once.
