One of my all time favorite Thai dishes is the Masaman Curry. Potatoes, coconut milk, rice, beef, and basil yum! Back on track with Weight Watcher's, Masaman is a bit of a no-no. I believe one cup sans rice is 11 points :( I came across this dish for Thai Shrimp Curry a while ago and always wanted to give it a try. Similar to my favorite but only three points! Even with a cup of rice it's still very low in points at 8pts. You can feel like you are cheating when you are not :) Cost is great too for a shrimp dish. Eat this out and it will cost you about $15 bucks per serving. Score!
Ingredients: Serves Four
1 tsp oil
4 scallions, whites and greens separated, chopped
1 tbsp Thai red curry paste
2 cloves garlic, minced
1 lb shrimp, peeled and deveined
6 oz light coconut milk
2 tsp fish sauce
1/4 cup fresh cilantro, chopped
salt to taste
Method:
- In a large nonstick skillet, heat oil on medium-high.
- Add scallion whites and red curry paste and sauté one minute.
- Add shrimp and garlic, season with salt and cook about 2-3 minutes. Add coconut milk, fish sauce and mix well. Simmer about 2-3 minutes, until shrimp is cooked through.
- Remove from heat, mix in scallion greens and cilantro. Serve over rice and enjoy!
