Thai Style Green Curry Shrimp

One of my all time favorite Thai dishes is the Masaman Curry. Potatoes, coconut milk, rice, beef, and basil yum! Back on track with Weight Watcher's, Masaman is a bit of a no-no. I believe one cup sans rice is 11 points :( I came across this dish for Thai Shrimp Curry a while ago and always wanted to give it a try. Similar to my favorite but only three points! Even with a cup of rice it's still very low in points at 8pts. You can feel like you are cheating when you are not :) Cost is great too for a shrimp dish. Eat this out and it will cost you about $15 bucks per serving. Score!

Ingredients: Serves Four

1 tsp oil
4 scallions, whites and greens separated, chopped
1 tbsp Thai red curry paste
2 cloves garlic, minced
1 lb shrimp, peeled and deveined
6 oz light coconut milk
2 tsp fish sauce
1/4 cup fresh cilantro, chopped
salt to taste

Method:

  • In a large nonstick skillet, heat oil on medium-high.
  • Add scallion whites and red curry paste and sauté one minute.
  • Add shrimp and garlic, season with salt and cook about 2-3 minutes. Add coconut milk, fish sauce and mix well. Simmer about 2-3 minutes, until shrimp is cooked through.
  • Remove from heat, mix in scallion greens and cilantro. Serve over rice and enjoy!
