This past week I gave Weight Watcher's Points Plus a go and decided to see if it worked as well as the old points system. While fruits and veggies are now free, carbs are now worth more points. While low fat meats are low in points they need something to go on the side. Veggies are zero points but can be a bit boring. This recipe came from WW and it makes a nice low point side for some chicken. The little bit of cheese adds a lot of flavor. It was a struggle to get use to the new system but I managed to loose over a pound in one week :), which is a lot for me.
Ingredients: Serves 4
1 head cauliflower
1/2 cup shredded fresh Parmesan cheese, divided
1/4 cup fat-free sour cream
1/2 teaspoon seasoned salt
1/4 teaspoon pepper
cooking spray
1/4 cup Italian-seasoned bread crumbs
1 teaspoon butter
Method:
- Preheat oven to 400 degrees.
- Cut cauliflower lengthwise into quarters, removing outer leaves and stalk, break into florets. Steam, covered in a Dutch oven 8 minutes or until tender.
- Place 2 cups cauliflower, 1/4 cup cheese, and next four ingredients in a blender or food processor, process until smooth.
- Please remaining cauliflower in a bowl, and stir in pureed cauliflower mixture.
- Spoon into a 1/12 quart baking dish coated with cooking spray. Combine remaining 1/4cup cheese, breadcrumbs, and butter in a small bowl and toss with a fork. Sprinkle crumb mixture over cauliflower mixture.
- Bake at 400 for 25 minutes.
