Seared Scallops in a White Wine Butter Sauce

Happy Good Friday! This is a great dish to make today for those who are not eating meat on Fridays.Back on track with Weight Watchers and I have been rekindling a love affair with seafood. While salmon has 9 points most seafood such as shrimp, cod, or scallops are low in points. Not only low in points but seafood also has a lot of protein which keeps you full and satisfied. Scallops are one of my favorites but I've never tried to make them at home. Even though they are very expensive, it's obviously much cheaper to make at home. This dish is impressive for company but easy enough for a weeknight. I found it where else but online (on recipe.com) after doing some Google searching. This does not make you feel like you are eating diet food but at only four points you can have your "cake" and eat it too!

Ingredients: Serves Four
1 pound fresh sea scallops2 tablespoons butter or margarine3 cloves garlic, minced1/4 cup dry white wine1 tablespoon snipped fresh chives or parsley1/8 teaspoon salt
Method:

  • Rinse scallops; pat dry with paper towels.
  • In a 12-inch skillet cook garlic in 1 tablespoon of the butter over medium-high heat for 30 seconds. Add the scallops. Cook, stirring frequently, for 2 to 3 minutes or until scallops turn opaque. Remove from skillet and transfer to a serving platter. Add remaining 1 tablespoon butter and wine to the skillet. Cook and stir to loosen any browned bits. Pour over scallops; sprinkle with chives and salt.
