Maple Walnut Pumpkin Pie

What to make for Thanksgiving when your in them middle of moving? That was my dilemma and this pumpkin pie was perfect. I made the crust using melted butter, a bit of sugar and graham cracker crumbs. Mix them together and pat on the bottom of a pie dish. Bake for 8 minutes at 350 and your done. It's much easier than a regular pie crust. Back to the maple walnut pumpkin pie... .. This comes together very fast. All you have to do is mix together the filling, pour, and bake. It was delicious. No one will ever know how easy it was to make!

Ingredients: Serves Eight
1 15 oz can pumpkin
1 14oz can sweetened condensed milk
2 eggs
1 teaspoon maple syrup
1/2 teaspoon salt
1/2 teaspoon cinnamon
1/4 teaspoon ground ginger
1/4 teaspoon ground nutmeg

topping
1/3 cup brown sugar
1/3 cup flour
1/2 teaspoon cinnamon
1/2 cup toasted chopped walnuts
1/3 cup butter

ready made graham cracker pie crust
Method:

  • Preheat oven to 425 degrees F.
  • In large mixing bowl, combine pumpkin, sweetened condensed milk, eggs, cinnamon, maple flavoring, ginger, nutmeg and salt; mix well. Pour into pie shell.
  • Bake at 425 degrees F for 15 minutes. Reduce oven to 350 degrees F; continue baking 30 minutes.
  • In medium mixing bowl, combine brown sugar, flour and cinnamon; cut in butter until crumbly. Stir in nuts.
  • Remove pie from oven; top evenly with crumb mixture. Return to oven 10 minutes. Cool. Garnish as desired. Store covered in refrigerator.
