Tomatillo Salsa
Last weekend I came across some green and purple gems in the Union Square Farmer's Market - tomatillos. Tomatillo's are similar to tomatoes but more tart and either used in salsa or in sauces. One of the best things about them is they last for a about a month in the fridge. I decided to go the classic route and use them to make salsa. I checked many recipes and most were the same. If it works it works. This one is a keeper.
Ingredients: Makes 2 cups, or 8-1/4 cup serving
1 1/2 pounds of tomatillos, husks removed and cut into quarters
1/2 small red onion, coarsely chopped
1 garlic clove, minced
1 teaspoon hot sauce or one hot pepper minced
juice of 1 lime
1 teaspoon salt and pepper (to taste)
1/2 cup cilantro leaves, chopped
Method:
  • Add all of the ingredients into a food processor and pulse, leave chunky.
  • Let sit for an hour to let the flavors meld together.

Time: 15 minutes active, total
