Nothing is better during a big blizzard than a nice pot of chicken soup! I hope everyone is safe and cozy with there friends and loved ones during Nemo. This chicken soup is a different take on the traditional with the addition of pumpkin and cheese. You don't taste the pumpkin but it adds a dose of veggies and vitamins to the soup. The cheese is what makes the soup. Despite the addition of cheese this soup is still low in calories and WW points since it's spread out throughout six bowls. The ingredients might sound a little strange but trust me it's worth a try!*Recipe from the blog Picky Palate.
Ingredients: Serves Six (1 1/2 cup servings)
1 large onion, chopped
1 cup celery, diced
1 cup carrots, diced
3 cups shredded chicken
32 oz. chicken broth
15 oz. can pumpkin puree
1/2 cup 1% milk
1 cup shredded cheddar cheese
salt to taste
olive oil spray
Method:
- Heat deep sauté pan over medium heat, add olive oil spray. Add onion, celery, and carrots and cook about 15 minute, until softened.
- Add garlic and cook for one minute.
- Add chicken, chicken broth, pumpkin, and milk.
- When hot add cheese and cook until melted.
- Season with salt/pepper.
