Rocky Road Brownies

I should have posted this recipe weeks ago after I made them for a block party. I've been busy the past few weeks first with Project Food Blog and now with studying for a major exam. I decided to make these when looking for something fun to make for a labor day block party. I wanted something that everyone would like. My first thought was a brownie. However, usually more than one person makes brownies at these events. I wanted mine to stand out. I came across these in my Toll House Cookie book. These had just that something extra to make mine the star of the dessert table. The recipe does not give you much batter but don't fret (like I did). The top half of the bar makes up for much of the volume of the brownie. Make sure not to over cook the bottom because after you add the topping you have to bake for another couple of minutes. Next time, I am going to put under the broiler for a minute instead of back in the oven, for a toasty campfire taste. These were very yummy and would be great for a holiday potluck.Ingredients: Serves 30 (makes 30 bars)
2 cups (1 12oz package) semi sweet chocolate chips
1 1/2 cups flour
1 1/2 teaspoons baking powder
1 cup sugar
6 tablespoons butter
1 1/2 teaspoons vanilla extract
2 large eggs
2 cups miniature marshmallows
1 1/2 cups coarsely chopped walnuts
Method:

  • Preheat oven to 375, grease 13x9 inch baking pan
  • Microwave 1 cup morsels in medium, uncovered microwave safe bowl for one minute
  • Stir and microwave for additional 10-15 seconds if necessary till chocolate is melted, cool to room temperature
  • Combine flower and baking powder in a small bowl
  • Beat sugar, butter and vanilla, beat in eggs, add melted chocolate.
  • Gradually add in flour mixture and spread into pan
  • Bake 16-20 minutes, until toothpick comes out slightly sticky
  • Remove from oven, sprinkle immediately with marshmallows, nuts and remaining morsels. Return to oven for 2 minutes or until marshmallows begin to melt
  • Cool for 20 minutes and cut bars with a wet knife.
